Ci sono molti aspetti della professionalità di un cameriere che secondo me non vengono spesso valutati, coinvolti e quindi insegnati all’interno di un corso di Sala. Con questo Corso on line, intendiamo porre l’accento, su alcuni di questi aspetti, nella speranza che leggendoci a qualcuno venga in mente di dedicare maggiore attenzione a questi argomenti, per migliorare la qualità del proprio servizio.

La prima lezione inizia con un’intervista ad un Mentalista!
Si, avete letto bene, e non un mentalista qualsiasi.
Lui si chiama Aldo Aldini, è di Terni, ma lo abbiamo visto sui grandi schermi anche su ITALIA’S GOT TALENT, o più recentemente su Agon Channel per il programma CHANCE.

Aldo tu eserciti il tuo mestiere di MENTALISTA da oltre 20 anni. Hai solcato palchi con oltre 6mila spettatori, ma agli inizi ti capitava anche di fare piccoli spettacoli tra i tavoli di alcuni ristoranti della tua città. Ho avuto modo di conoscerti in una di quelle occasioni e ricordo che pensai – “Sapessi anche io fare questi numeri sarei un supercameriere!”. Considerando quelle che sono le tue capacità, che ne dici di dare dei consigli a chi in sala deve essere capace non solo di servire, ma anche capire e oserei dire, leggere il pensiero dei propri clienti?

La cosa da cui bisogna sempre partire è l’approccio iniziale. Capire con quale tavolo iniziare, quale persona scegliere o NON scegliere per iniziare lo spettacolo, o nel caso del cameriere da cui prendere una comanda, può determinare gran parte della serata. Se individui subito tra i clienti una buona spalla il lavoro è già a buon punto, mentre se inizi con un tavolo scontroso o semplicemente disinteressato alle tue parole rischi di allontanare da te per empatia tutta la sala. Quando mi capitava, la colpa era sempre la mia che non avevo saputo valutare la situazione.
Con l’esperienza sono errori che comunque si impara a non commettere, o anche a rimediare.

E dagli ultimi spettacolo che ho visto mi è sembrato che ormai sei diventato più che bravo. Ho visto un tuo numero durante un talent show dove a Salvatore Esposito (il Genny Savastano di Gomorra) “leggevi la mente”. Uno come te in sala potrebbe scrivere la comanda senza nemmeno parlare con il cliente!

Mi prendi in giro?

No dico sul serio.

Su questo esperimento ci dobbiamo tornare su. Nel tuo mondo la comunicazione è tutto e in teoria dovrebbe esserlo anche nel nostro. Ci sono 3 tipi di comunicazione:
1) verbale: il contenuto del nostro messaggio espresso tramite parole.
2) paraverbale: tono della voce, ritmo, e altre sfumature.
3) non verbale: sguardo, gestualità, postura, in generale quello che viene definito il linguaggio del corpo
Un buon cameriere secondo noi dovrebbe conoscere perlomeno la base di queste 3 tipologie non credi?

Concordo. Ti faccio un esempio per quanto riguarda in parte la comunicazione non verbale. Quando nei locali mi relazionavo con un tavolo, era in effetti un pò come se prendevo la posizione di un cameriere che si appresta a prendere la comanda, facendo domande e ricevendo risposte. Per me era molto importante individuare i ruoli: chi era il gregario, il timido, il leader.
Un consiglio semplice da dare è quello di non dare le spalle, anche di lato ad un soggetto che sarà parte della scena. Mettendoci per esempio tra un timido e un leader corriamo il rischio di escludere il primo e inevitabilmente voltarci verso il secondo che tenderà a guidare la conversazione. Se invece ci poniamo di fronte entrambi saremo noi a dettare i tempi anche con un semplice sguardo.
Essere noi a guidare la conversazione, senza però mostrarci come quelli che comandano è un altro aspetto importante.

Sai non ci avevo mai pensato, ma credo di aver agito in questo modo senza sapere che c’era una logica nel farlo.

Chi lavora a contatto con il pubblico da molto tempo, spesso sviluppa le tecniche migliori per sapersi confrontare con i propri clienti. Decodificare questi atteggiamenti è un lavoro che richiede esercizio e attenzione.

Che è esattamente quello che un mentalista deve fare se vuole riuscire nel proprio lavoro. Questa decodificazione di cui tu parli può quindi essere anche insegnata come strumento da applicare anche in contesti diversi dal mentalismo?

Certamente, molte delle tecniche del mentalismo sono adattabili a vari contesti specialmente in quelli di tipo commerciale dove avviene un contatto con il pubblico e non solo.

Ti è già capitato di insegnarli?

Spesso mi chiamano per meeting aziendali, ma preferisco non essere definito come “formatore”. Generalmente tendo più a dare a chi mi ingaggia per questi incontri, uno spettacolo propeteutico, capace quindi di rendere le persone maggiormente capaci poi di apprendere, e comprendere soprattutto, le tecniche da applicare nel proprio ambito.
