Se volessimo fare polemica dovrebbe aggiungere “persona che perde dignità, affetti e stima di se stesso, ore di vita spese a servire gente che non gli importa granché di quello che stai facendo anche se l’impegno che ci stai mettendo è massimo”
Ma il buon cameriere sà che tutto quello che ho sopracitato sono sfoghi temporanei, perché l’amore e la passione per il proprio mestiere passa di gran lunga queste piccole incrinature di rapporto, un po’ come fra fidanzati, gli screzi ci sono ma alla fine si finisce sotto le lenzuola insieme, sempre e comunque.
Il cameriere che ama il proprio settore, si meraviglia ogni giorno dei personaggi che può incontrare facendo questo lavoro, e non parlo dei personaggi famosi, parlo della gente vera, che vive e spende il proprio tempo al ristorante come un vero rinfocolamento di panza e anima, sono quelli che si fermano a chiacchierare delle ore, che si bevono tutta la bottiglia di limoncello se tu cameriere hai la malaugurata idea di lasciargliela incustodita sul tavolo, sono quelli sguaiati che urlano e raccontano le barzellette sconce incuranti di moglie e figli piccoli, sono quelli che dopo il caffè è buona creanza che gli sia offerto il grappino perché sennò non riesce a digerire, insomma sono le cosiddette macchiette che poi saranno protagoniste di racconti a colleghi e familiari.

Il cameriere ha la fortuna di entrare in una strana intimità con i propri clienti, si crea una sorta di velata fiducia, perché il cliente seduto al tavolo è vulnerabile e lui in te “cameriere” vede il suo consigliere fidato. Signori siamo realisti è vero che avere un ottimo cuoco che ti sforna piatti fantastici è importante ma se a servire non c’è un cameriere con la C maiuscola, è tutto lavoro sprecato. Per non parlare del fatto che un piatto buonissimo servito come si deve e con un bel sorriso diventa superlativo.
Amate il vostro mestiere, perché un domani ai vostri figli e nipoti non immaginate nemmeno la quantità di storie che gli potrete raccontare.
