I camerieri salveranno l’Italia!
No tranquilli, non intendiamo fondare un partito anche noi (anche se sarebbe divertente!). In questi giorni è tornata a far parlare la questione “CENTRI COMMERCIALI e FERRAGOSTO”.
Commessi sul piede di guerra, supportati dai sindacati (ehi! ma esistete? No, perchè non vi sentiamo mai parlare di noi) che minacciano battaglia verso quei centri commerciali che intenderanno restare aperti il 15 agosto negando la festa ai propri dipendenti.
Che poi vorrei sapere, martedì 15 agosto, cosa avranno di particolare da festeggiare i commessi? Ma questo è un altro discorso.
Torniamo ai camerieri (e tutti coloro che lavorano nella ristorazione).
Quest’anno la stagione ha visto bel tempo su tutta la penisola, un caldo tropicale e un ponte di ferragosto così lungo che basterebbe per coprire lo stretto di Messina (ma poi lo fanno più QUEL ponte??)
In tutta questa torrida estate ci siamo noi, gli INVISIBILI. Mi piace definirci così, come il basso in una rock band: nessuno lo nota (tranne chi sa suonare) ma è quell’elemento che rende la musica piacevole e armoniosa.
Li vedo, ogni giorno, durante il caffè del pomeriggio, prima del servizio di sera, sfilare lungo le varie strade con le loro camicie in mano pronti all’ennesima battaglia.
Andiamo avanti per inerzia. Le energie le abbiamo esaurite a Giugno che da sempre ci regala i più grandi pienoni del fine settimana, per poi vedere leggermente calare il lavoro a fine luglio e di nuovo, come su una giostra, risalire rapidamente in questi giorni in prossimità del 15 Agosto.
Non ci sentirete mai lamentare del fatto che lavoriamo a Ferragosto.
Qualcuno in questi giorni sostiene il fatto che “NOI LO SAPPIAMO FIN DALL’INIZIO a cosa andiamo incontro quando scegliamo di fare questo lavoro”. A questi rispondo che l’unica cosa che noi sappiamo fin dall’inizio è che si lavora quando il lavoro c’è.
Così come sappiamo che abbiamo una dignità, dei diritti e delle necessità da rispettare.
Siamo stufi di contratti inesistenti, di condizioni di lavoro usuranti e quando il vaso è pieno, a costo di rimetterci economicamente, piuttosto abbandoniamo la nave.
Nessuna levata di scudi in nostro favore. Nessun sindacato…anzi! Basti pensare a come sono stati aboliti i voucher quest’anno, senza minimamente considerare il vuoto (l’ennesimo) in cui si lasciava il nostro settore già così dedito ai contratti in nero, vuoi per inadempienza dei ristoratori, vuoi anche per l’elevato costo di un contratto e relativi contributi in un periodo di 4/5 mesi in cui un locale si può ritrovare a raddoppiare il numero dei propri dipendenti.
Siamo tanti, ma siamo soli.
Eppure non ci fermiamo. Continuiamo.
Ogni anno una stagione. Camicia bianca in mano.
Non solo siamo simbolo del SERVIZIO (e ricordatevi, serviamo ma NON SIAMO SERVITORI), ma del sacrificio. Non voglio elevarci a martiri, ma non mi si venga a dire che non è un sacrificio lavorare fino a 14 ore al giorno, tutti i giorni, per 4 mesi. Che poi anche se a fine mese uno si porta a casa 3mila euro oppure 1500, non fa molta differenza.
Non si lavora 100 ore a settimana solo per i soldi.
Si fa quello che si deve fare. Piuttosto che incazzarci per le troppe ore di lavoro, in questi giorni sarà più probabile che le nostre discussioni verteranno su come organizzare il servizio di Ferragosto, cosa mettere nel menù, dove mettere lo sbarazzo, come organizzare la mise en place, quanti prenotati prendere o se fermarsi e non prendere più nessuno per dare un servizio migliore.
Mentre qualcuno si sta lamentando perchè dovrà lavorare in un martedì di Agosto, noi, che stiamo lavorando anche il doppio delle ore da mesi, stiamo pensando a come rendere quel giorno piacevole per chi verrà a trovarci. Anche quei commessi.
Ecco perchè dico che i camerieri salveranno l’Italia.
Perchè penso che se tutti vivissimo il nostro paese come noi ci viviamo il Ferragosto, forse tanti problemi riusciremmo a superarli, tutti insieme.
