GIN DAY 2016 – Post Postumi

Sono passati due giorni ma il Gin Day ancora ci accompagna.
In parte è anche l’hangover (una volta si chiamavano postumi), ma anche se noi di OCCCA (io e il buon Fabio Tomassini) ci siamo limitati a bere un gin tonic e assaggiare non più di una decina di gin, è stata un’esperienza estremamente inebriante!
ginday2016 art01 OCCCA.itPartiti alle 4 di notte da Terni siamo giunti a Milano, verso le 10 di mattina, all’entrata del capannone in via Giacomo Watt 15, dove Bartender.it organizzava il quarto appuntamento ormai consolidato che mette in rete produttori di gin, di toniche e seminari tenuti dai bartender migliori che ci sono in circolazione, per lo più tutti italiani.
E questo dato, per quanto possa sembrare scontato, è il primo da cui vorrei partire.
La presenza di esperti come Luca Cinalli, Leonardo Leuci, Dario Comini, Fulvio Piccinino e tanti altri, tutti maestri della miscelazione, tutti di origine italiana, è un qualcosa che fa riflettere.
Abbiamo un patrimonio costituito da risorse umane, che dovremmo riuscire a elevare ben oltre il solito palcoscenico da programmi tv come Masterchef, dove il nostro lavoro acquisisce una notorietà verso il pubblico dei non addetti ai lavori, senza riuscire a esprimere quell’arte e artigianalità, frutto di un lungo lavoro fatto di dedizione e passione. Probabilmente nemmeno per colpa del contenuto di questi programmi, ma semplicemente perchè il medium stesso (in questo caso la TV) non permette di far conoscere e capire certi valori, certi saperi ed esperienze.
Eventi come questo sono necessari, fondamentali, per poter elevare la qualità delle nostre categorie di lavoro.
In una giornata, quella di lunedì siamo riusciti a vivere e vedere una porzione dell’evento.
Abbiamo visto e ascoltato il seminario tenuto prima da Leonardo Leuci e Antonio Parlapiano del Jerry Thomas Project e poi quello tenuto da Luca Cinalli subito dopo.
I primi hanno tenuto una sorta di lezione su quello che riguarda il concetto di twist, ovvero quello standard con cui si andarono a creare nuove ricette di drink agli albori della mixology, quando all’inizio c’erano pochi cocktail, inventati in base alle materie prime che avevano a disposizione. Quando queste iniziarono ad aumentare, per tipologia e varietà, venne la necessità e curiosità di sperimentare nuove ricette, adottando così una metodologia di sostituzione di alcuni elementi del cocktail con i nuovi spiriti o aromi che il mercato offriva.
Questo metodo, così definito twist, si divise in twist orizzontale, verticale e diagonale.
Il seminario spiegava come moltissimi cocktail famosi, entrati poi nella lista degli IBA, provengano da queste semplici regole che, ancora oggi, sono del tutto attuali e applicabili nella loro semplicità, così da permettere di creare nuovi drink magari riscoprendo ingredienti passati di moda o aggiungendo novità presenti nel mercato.
ginday2016 art02 OCCCA.itLuca Cinalli ha invece proposto 3 differenti drink, mostrando il suo modo spettacolare ma al tempo stesso efficace e pragmatico di costruire un drink innovativo. Un bicchiere con un termometro come stir al suo interno può sembrare una trovata estetica. In realtà in questo modo il cliente può constatare il cambio costante di temperatura del proprio drink. Se un cocktail è consigliabile berlo entro una certa temperatura, il cliente tenderà a finirlo prima che lo stesso si annacqui troppo e perda quindi il freddo che ne migliora le caratteristiche. Risultato: il drink finisce prima e magari ne ordinano un altro!
Quello che mi ha più colpito però del seminario di Luca Cinalli è stato un concetto espresso all’inizio. Ha spiegato come nella costruzione di un cocktail lui da estrema importanza alla gestualità e le azioni che dovrà compiere, affinchè queste gli permettano sempre di avere un contatto visivo con il cliente. Anche qui, il motivo è più pragmatico che per motivi vanitosi.
Il cliente spesso non solo non espone alcune critiche o anche complimenti, ma può anche non essere cosciente di giudizi che possono trapelare da smorfie o espressioni velate di stupore. Dettagli questi, che il nostro bartender ritiene fondamentali per capire lo sviluppo, l’evoluzione, i cambiamenti che dovrà approntare al suo drink o le parti vincenti che sanno conquistare l’occhio e la curiosità del cliente.
Insomma, dietro a tanti effetti speciali, e vere e proprie prodezze sceniche (come l’affumicatura fatta sul momento del secondo cocktail con un sistema a “clessidra”), scoprire che esiste una ragion veduta ad ogni creazione di questi maestri ci fa capire che il nostro lavoro, deve poggiare su elementi concreti, realistici, come la capacità di vendere più cocktail mentre comunque si forma (meglio che educare) il cliente, così come si può fare spettacolo mentre si crea un cocktail, non solo lanciando in aria bottiglie dalle quali non discosteremo gli occhi, ma magari maneggiando un arnese da apicoltore per affumicare un ampolla, e in tutto questo riuscire a recepire i feedback di chi abbiamo di fronte.
Praticità, tecnica, studio, meraviglia, stupore, sperimentazione.
Sono forse gli aggettivi migliori per descrivere questo evento che ci teniamo a consigliare a tutti gli addetti alla ristorazione, in particolare per chi lavora in sala, non solo per i barman.
Oltre questo poi ci siamo stati noi, al nostro primo banco di prova come OCCCA dentro un evento. Onestamente non sapevamo nemmeno noi cosa sarebbe successo.

Ci siamo divertiti insieme a voi, ci avete cercato, avete gridato OCCCA! OCCCA! OCCCA! e con una fortuna inaspettata, abbiamo azzeccato le taglie di chi avrebbe vinto.
