La formazione al sacrificio, non al piatto!

Bellissima l’iniziativa degli istituti alberghieri di mandare i propri alunni a fare pratica nelle strutture ricettive.
Bello bello bello.
I ragazzi così si rendono conto a cosa vanno incontro e capiscono l’ applicazione della teoria alla pratica. L’ azienda inoltre ha la possibilità di investire su collaboratori futuri, formandoli a dovere e dando loro possibilità di crescita.

Ma care scuole, se proprio volete preparare la generazione futura alla ristorazione bisogna lavorare ancora su qualche piccolo particolare.
Del tipo che le 6 ore e 40 non si fanno al giorno, ma a servizio.
Del tipo che i festivi sono lavorativi.
Del tipo che l’ orologio bisogna dimenticarselo.
Così come la vita privata, gli affetti, le fidanzatine e le partite di calcetto.
Non si tratta di “sfruttare”, anche perchè, diciamocela tutta, uno stagista spesso e volentieri è più un investimento di tempo e di rischio di errore che altro. Si tratta di onestà intellettuale, di prepararli al meglio alla loro vita di domani.
E siccome ci sono già i media, le tv, le radio, i giornalisti e i food blogger a dipingere questo mondo fatato come adorabile, almeno voi, siate onesti con loro.
Preparateli alla vita di merda a cui vanno incontro, in modo da dar loro la possibilità di scelta. Come abbiamo fatto tutti noi, che ancora oggi siamo convinti che questo sia il lavoro più bello del mondo.
Altrimenti, quando ci sbatteranno realmente il musetto, passeranno il resto della loro vita a sentirsi inadeguati, inappropriati e non all’ altezza delle situazioni.

    Ho 46 anni,ho studiato allo IAL di Cervia,quindi non ho un diploma,ma ho imparato da maestri del lavoro,ne cito una a quale devo tanto Guidi Adamo,gran maestro della ristorazione,ci spiegava molto sul comportamento,sul rispetto,sulla pulizia,sul servizio di sala.devo dire che anche che tutti erano affascinati nel modo in cui spiegava.ora molti “alunni” pensano che l’alberghiera sia facile,ma non e’ cosi’.metteteci un po di tempo in più’,se vi chiedono di stare 10 minuti in più’ fate solo bella figura.grazie.

      Una delle cause della crisi del settore per quanto riguarda la ricerca del personale qualificato passa sicuramente per la mancanza di maestri simili a Guidi Adamo, capace di inculcare sia nozioni tecnico-pratiche che comportamentali, nel pieno rispetto del lavoro stesso.
      Bisogna far innamorare le persone che si cimentano in questo lavoro, ma non nella maniera sbagliata.
      Evitando di dare importanza solo ed esclusivamente al risultato finale ma ad ogni fase del processo.
      Solo se si ama ciò che si fa si va incontro a certi sacrifici…

Ciao, confermo tutto ciò che dite, io insegno in un cfp alberghiero e arrivano allievi di qualsiasi tipologia, la colpa della poca voglia dei ragazzi e delle famiglie che spesso ti chiedono un locale sotto casa per fare il tirocinio e non lontano , i genitori ti dicono ..” mio figlio ha fatto 8 ore in piedi “…è stanco…..oppure …..” gli danno da mangiare sempre le stesse cose!… alcune famiglie non capiscono che il nostro è un lavoro diverso dagli altri…che noi lavoriamo quando gli altri si divertono….purtroppo le famiglie non sanno educare e far crescere i loro figli..l’importante però è comperargli il telefono ultimo modello……

    1. Claudio concordo in linea generale con il tuo discorso. E’ proprio l’ educazione “al sacrificio” che manca.
      Magari qualcuno storce il naso e obietta “ma perchè devo andare PER FORZA incontro a grandi sacrifici??”.
      Purtroppo spesso non si ha coscienza, non è ben chiara la figura professionale che si è scelto. Anzi, spesso e volentieri viene distorta da messaggi sbagliati.
      Io non sono molto vecchio ma ricordo perfettamente quando fare “il cuoco” era quasi denigrante, era considerato come colui che aveva preferito il lavoro allo studio, le fatiche alla vita agiata, il trasferimento lontano da casa alla residenza coi genitori…
      Adesso, non dico che bisogna tornare a quei tempi perchè sicuramente la situazione non era socialmente positiva, ma bisognerebbe sfruttare al meglio questo periodo mediatico che – purtroppo o per fortuna – come tutte le mode cicliche terminerà.
      Le famiglie e le scuole devono collaborare. Lo so che è difficilissimo in questa epoca dove ogni valore e rapporto è precario, ma solo attraverso queste due guide si formerà la nuova società.
      E io mi auguro che sia migliore e non peggiore di quella attuale.
      Noi aziende non vediamo l’ ora di investire in giovani promesse, non giovani senza futuro.
