mi chiamo Marco Natali, ho 32 anni e lavoro nei ristoranti da oltre 10 anni.
Per quest’anno ho preparato una wish-list, una lista dei desideri, vedi tu quale esaudire per il futuro anno. Ecco quello che vorrei:
– Nuove leve di giovani aiuto cuochi, o commis di sala, che non mollino il servizio del sabato sera per un 37 di febbre (per poi la domenica andare all’after).
– Una proposta di contratto normale, con orari di lavoro adeguati, e possibilità di avanzamento di carriera.
– Il quarto livello come cameriere dopo oltre 10 anni di lavoro.
– Pizzaioli che smettano di dire che stendono la pizza a mano, quando per “a mano” intendono con il mattarello in mano.
– Lavorare con cuochi sobri, almeno fino a fine servizio, e meno afflitti da paranoie e drammi personali nel dopo servizio.
– Vorrei che i clienti la smettessero di andare in 15 in bagno per “pippare” cocaina. Seriamente. Lo sappiamo, pensate veramente di essere così furbi? E almeno pulite i ripiani e non lasciate bustine di plastica in giro che ci fate brutta figura.
– Vorrei che i miei colleghi di lavoro la smettessero di abusare di qualsiasi droga. Siete ingestibili dopo il primo turno di servizio.
– Vorrei che ognuno in sala si portasse il proprio tirebouchon, accendino e penna.
– Che i nuovi ristoranti fossero aperti da addetti del settore, o nel caso di imprenditori, che facessero gli imprenditori, lasciando fare il lavoro di sala e cucina a chi lo sa fare, facendosi carico del rischio di impresa. Se non hai i soldi per affrontare un’avventura simile non esternalizzi i costi e i debiti sui tuoi dipendenti.
– Vorrei che nel BEL PAESE fosse dato finalmente il giusto spazio al turismo, fermo a quel 10,5% di PIL.
– Vorrei non sentire più ordinare un 4 bianchi al bancone del bar.
– Che i clienti smettessero di chiedere “qualcosa di forte”…
– Vorrei che a Ferragosto, quando nuovamente si solleveranno gli scudi per i commessi “costretti” a lavorare durante un giorno di festa, ci fosse almeno un servizio al telegiornale dove venga dato risalto a noi addetti della ristorazione che, da sempre, lavoriamo durante le feste per il piacere e il divertimento di tutti; così come vengono ringraziati quelli che lavorano negli ospedali a capodanno quando la gente si fa zompare le dita con i botti, o altre categorie che non hanno le stesse libertà di chi lavora nei giorni feriali ed ha più di 3 settimane di ferie l’anno.
Un minimo di considerazione e riconoscenza una tantum insomma, niente di che.
– Un tavolo di discussione serio riguardo i nostri contratti di lavoro nazionale.
– Vorrei che tutti noi addetti al settore iniziassimo a sentirci un’unica grande categoria, smettendola di suddividerci tra sala e cucina, cucina e pizzeria, portapiatti e maitre, ma un’unica grande brigata.
Forse la lista è diventata troppo lunga caro Babbo Natale.
Facciamo così, ti chiedo di esaudire un unico desiderio.
Io caro Babbo, 1 anno e mezzo fa ho creato una pagina facebook, OCCCA. Quella pagina è cresciuta tanto e oggi conta quasi 100mila follower. Sei mesi fa ho iniziato a lavorare ad un progetto ambizioso, QWACK, un’app che riesca a organizzare la categoria, tutta, dandogli i mezzi anche per autogestirsi.
Ho lanciato una campagna di raccolta fondi dal basso per riuscire a realizzare questo desiderio. Ecco se magari ce la facessi a darmi una mano in questo, forse poi al resto ci potrei lavorare insieme a tutti i miei sostenitori.
