Cos’è la MANCIA, se non il nostro 5×1000?
Con questo primo video inauguriamo una serie di quelle che abbiamo definito “campagne di sensibilizzazione”. Considerando l’arrivare ormai prossimo della stagione estiva, ci sembrava doveroso ricordare l’importanza che per noi ha la mancia.
Partiamo dalle basi. La mancia va lasciata al cameriere.
In un ristorante serio le mance generalmente vengono messe in un unico contenitore e a fine settimana o fine mese, suddivise tra tutti i componenti della brigata sia di sala che di cucina. Che tra questi vi sia anche il titolare è un argomento che andrebbe discusso in separata sede.
Resta comunque il fatto che la mancia non va lasciata, nel limite del possibile, alla cassa quando si paga il conto, per diversi motivi:
– fa piacere vedere riconosciuto il proprio lavoro e in una serata concitata potrebbe essere difficile risalire a chi fosse il cameriere che vi ha servito.
– “accidentalmente” i soldi delle mance potrebbero finire in cassa insieme al resto dell’incasso. Accidentalmente ovviamente.
– ogni cameriere, o chef de rang, è responsabile dei propri tavoli, dall’inizio alla fine, dalle mance alle ipotetiche lamentele (quando non c’era Trip Advisor almeno, l’abitudine era dirle in faccia le critiche). Anche perchè, specialmente in quei ristoranti con centinaia di coperti, se alla cassa convogliamo qualsiasi chiacchiera, complimento, reclamo di ogni genere, il direttore o direttrice diventano matti e si crea la coda per pagare (con relativi conti in attesa!).
Non pensate che lasciare qualche euro sia disdicevole. E’ realmente il gesto che conta non la platealità. E se siete stati bene e spicci non ne avete, anche un complimento sincero farà sempre piacere.
Fatta questa dovuta precisazione di metodo, passiamo a definire cos’è per noi la mancia. Innanzitutto, il nostro guadagno deriva totalmente dal nostro stipendio. Non siamo in quei paesi dove una percentuale del conto è per il servizio. Ogni tanto si sentono storie di camerieri a Miami che guadagnano 5mila dollari solo con quello! Beati loro.
Le mance sono quel vezzo, forse ormai di un retaggio che si sta perdendo, di un mondo lavorativo che ha sempre avuto regole sue. In fin dei conti perchè lasciare la mancia? Mancia che tra l’altro è completamente “in nero”. Voglio dire se come cliente ti pago lo stipendio già nel conto, perchè aggiungerci qualcosa sopra?
Non sapremmo proprio come giustificarlo. Forse un tempo gli stipendi erano più bassi, forse era un modo per amicarsi il cameriere ai piani del proprio hotel, o il barista che sapeva di doverci servire quel goccetto in più di whiskey senza che la moglie ci vedesse.
Non lo sappiamo. O forse si. Chi vi scrive è cameriere, e quando sono cliente in un ristorante, lascio sempre la mancia, vuoi per empatia, vuoi perchè so che significa essere dall’altra parte e soprattutto meritarsela.

Forse non c’è bisogno di spiegare allora, visto che anche per breve tempo chiunque in passato ha fatto una volta il cameriere o cucinato per la vigilia di natale per 28 persone e al pensiero di quel ristorante così ancora pieno alle 22.30, c’aggiunge anche un:
“Fate i complimenti anche alla cucina, questi sono per voi”
Un ultimo spassionato consiglio. Non pensate che lasciare qualche euro sia disdicevole. E’ realmente il gesto che conta non la platealità. E se siete stati bene e spicci non ne avete, anche un complimento sincero farà sempre piacere.
