OCCCA diventerà un SINDACATO?

OCCCA dovrebbe diventare un SINDACATO!
In questo anno mi è stato detto e chiesto più volte.
Il motivo è semplice. Innanzitutto vi è un’esigenza, quella di essere rappresentati, di essere tutelati ma anche informati.
Secondo i dati ISTAT per l’anno 2013 le attività dei servizi di alloggio e di ristorazione erano composte da oltre 300mila imprese e più di 1,3 milioni di addetti ai lavori.
Per fare un paragone con altri settori, nel mondo delle COSTRUZIONI, per lo stesso anno avevamo 1,4 milioni di addetti, mentre il METALLURGICO superava di poco le 600mila unità.
dati istat horecaSe i telegiornali ci informano di battaglie sindacali a favore di questi comparti, come per esempio i contratti nazionali degli operai delle acciaierie, o la sicurezza del lavoro nei cantieri, dall’altra parte mai un accenno (per lo meno serio e di riflessione) sulle condizioni di lavoro usuranti di chi lavora in cucina, o sulle scarse tutele di chi lavora 3 o 4 mesi, per poi tirare a campare il resto dell’anno quando c’è bassa stagione.
Se tutto va bene d’estate ci scappa un trafiletto sul bagno di lusso in qualche spiaggia Vip, la mancia esorbitante lasciata da qualche magnate russo, o altre notizie da rotocalco.
Per i media c’è il vincitore di Masterchef, il noto food blogger o il famoso pasticcere di turno. Apparentemente non importa molto dei “poveri garzoni” che lavorano 15 ore al giorno, 7 giorni su 7, per 1500 euro al mese (quando va bene, di cui 500 in nero).
Eppure quando d’estate parlano di vacanze e di vacanzieri, dietro tutto quel palcoscenico dove i protagonisti sono “quelli delle ferie”, ci siamo noi a permettere che la giostra continui a far divertire e rilassare, ma niente.
Nemmeno un “grazie” a Ferragosto.
Ecco allora perchè nasce l’esigenza di qualcuno che riesca non solo a essere portavoce delle tante istanze accumulate negli anni, ma anche che sappia rappresentare e comunicare all’esterno la realtà del nostro mestiere. Tutta. I lati positivi come quelli negativi, le potenzialità così come i limiti.
Ma il sindacato non è la risposta, almeno secondo me.
OCCCA non diventerà mai un sindacato, dove per sindacato intendiamo un’associazione di categoria con sedi dislocate sul territorio (con conseguenti spese), struttura verticale e, conseguentemente a tutto ciò, politicizzata.
Perchè è nella natura di un sindacato mettere insieme dei soggetti lavoratori, così come è nella natura della politica, interessarsi ad essi nel momento in cui riescono a diventare un bacino di elettori influenzabili per il voto.
Ma al di là del rischio di ritrovarci con uno strumento falsato da interessi diversi da quelli di partenza, il vero motivo per cui non ha senso creare una struttura simile è che oggi esistono strumenti migliori per rispondere alle nostre esigenze.

Innanzitutto quali sono queste esigenze?
– IDENTITÀ: ovvero riuscire a comunicare una volta per tutte chi siamo, quale è il nostro ruolo nel società e nel mondo del lavoro. Il 10,5% del PIL dell’Italia è dato dal turismo. In questo dato l’economica principale è quella legata a tutti i servizi HO.RE.CA. Economicamente abbiamo un peso, e questo andrebbe riconosciuto per potere essere tutelato e potenziato.
Ma non solo. Noi siamo ambasciatori di culture, di saperi, del nostro territorio. Dobbiamo iniziare ad essere coscienti della responsabilità che abbiamo quando portiamo un piatto a tavola. Un piatto non è solo cibo per sfamare il corpo, ma è la storia del posto in cui ci troviamo. Deve esserlo, perchè siamo l’Italia, il paese conosciuto in tutto il mondo per vino, olio, salumi, formaggi e tante pietanze e alimenti quante sono le regioni, province, comuni e frazioni di ogni angolo di questa penisola.
Se pensate come me che questi 2 importanti aspetti non vengono riconosciuti dalla massa, allora converrete che nessuno sta facendo abbastanza affinchè noi addetti alla ristorazione veniamo riconosciuti per quello che siamo e dovremmo essere.
– RAPPRESENTANZA: abbiamo bisogno di qualcuno, o qualcosa che faccia da megafono alle nostre richieste, alle nostre istanze.
– PROPOSTE: le nostre lamentele, i nostri bisogni devono concretizzarsi in proposte, per poter essere portate all’attenzione delle istituzioni. Per farlo però abbiamo bisogno anche di uno strumento che ci permetta innanzitutto di lavorare sui nostri problemi, di confrontarci al fine di capire quale è la strada migliore per tutti. Di TUTTI. Perchè non è pensabile ragionare alla ristorazione come ad una serie di compartimenti stagni dove la cucina pensa ai propri problemi, la sala ai suoi, e così via passando per pizzaioli, barman e tutti i ruoli che compongono la nostra brigata.
Siamo un’unica grande brigata e come sul lavoro, il problema di una parte riguarda tutti noi.
La nostra risposta non è un sindacato, ma un APP, l’APP di OCCCA.
