QUANTO PESA L’ANIMA DI UN BARISTA?

Quanto pesa l’anima di un barista?

Qualcuno, ricordando il titolo di un film del 2003 con Sean Penn del potrebbe rispondere 21 grammi.

L’idea che l’anima abbia un peso misurabile prese piede nel 1901, precisamente il 10 aprile, a Dorchester, nel Massachussets, quando il dott. Duncan Mc Dougall eseguì uno studio (spoiler: ben poco scientifico) che aveva come scopo dimostrare l’esistenza dell’anima, misurando la massa persa da un essere umano al momento del suo decesso.

I risultati dell’esperimento?

Mc Dougall aveva a disposizione 6 soggetti,

Due di questi persero peso al momento del decesso ma poco dopo persero altro peso.

I dati di due soggetti vennero scartati dallo stesso Mc Dougall, uno a causa di un decesso troppo affrettato (non era pronto per effettuare la misurazione), ed un altro a causa delle bilance tarate male.

Un quinto soggetto perse peso solo per poi riprenderne dopo pochi istanti.

Il sesto soggetto perse 3/4ti di oncia solida americana, circa 21 grammi.

Nel 1907 il New York Times se ne uscì con un trafiletto che recitava pressappoco così: “L’ANIMA HA UN PESO, SUPPONE UN MEDICO.”

É stata registrata una perdita di peso post mortem ed il medico dice che era in presenza di altri quattro medici quando la misurazione è stata effettuata.”

Lo studio venne in seguito pubblicato su un paio di riviste scientifiche e di lí a poco, mezzo mondo (spoiler: la metà credulona e facilona) iniziò a credere alla fiaba del peso dell’anima e dei 21 grammi.

“Ok Fabio, grazie per la lezioncina ma il barista che c’entra?”

C’entra eccome, perché questa storia ci insegna quanto siamo umanamente portati ad accettare dati sparati a caso ed opinioni spesso campate in aria, come verità assolute ed incontrovertibili, senza darci la pena di indagare il la fonte e la veridicità di questi dati ed opinioni

Ancora confusi sul ruolo del barista in questa storia?

Va bene, allora per spiegarvelo bene parliamo per un secondo di… cucina.

Supponiamo che voi siate a un tavolino del vostro bar preferito sorseggiando la vostra bevanda preferita.

Al tavolo a fianco un signore italiano sta parlando con una coppia di inglesi che, ad un certo punto, gli rivolgono una domanda sulla pasta che denota una certa ignoranza in materia:

“Mi scusi, ma lei che essendo italiano è un esperto, mi può dire per quanto tempo si deve cuocere “la pasta” perché risulti perfetta?

La domanda non vi sorprende, d’altronde sono stranieri, quello che vi sconvolge è la risposta del vostro connazionale:

“La pasta per essere perfetta si deve cuocere esattamente sette minuti, non uno di piùnon uno di meno.”

Ora, dipendentemente dall’indole che vi contraddistingue, le vostre reazioni potrebbero passare dalla semplice e fragorosa risata alla sedia piantata sulla fronte del demente.

Il perché è sotto gli occhi di tutti: come diavolo si puó dare una valutazione di questo tipo? É ovviamente un’idiozia.

Le variabili in gioco sono davvero troppe per dare una tempistica adatta ad ogni situazione.

Il formato di pasta, il tipo di grano utilizzato, la trafilatura, il grado di cottura desiderato e così via.

L’unica risposta sensata alla domanda dei nostri amici inglesi è: “Dipende”.

Punto. Fine. Game. Set. Match. Qualsiasi altra risposta sarebbe esattamente ciò che è: una sparata senza senso che può abbindolare solo ed esclusivamente uno stolto.

E allora (e qui veniamo finalmente a noi baristi) perché quando il tuo Mentore/amico/collega/agente/manutentore/torrefattore ti ha detto che per fare un caffè ci vogliono solo, assolutamente ed incontrovertibilmente, SETTE grammi di macinato per fare un caffè, TU non ti sei posto delle domande?

Perché non ti sei chiesto come fosse possibile che quel dato, sette grammi, fosse adeguato per qualsiasi combinazione di Miscela/Origine/Lavorazione/Tostatura/Macinatura/Macchina/Acqua eccetera eccetera?

Perché ti indigna sentire che è ottimale cuocere un pacchero di gragnano per sette minuti, ma non fai una piega se ti dicono che sette grammi di caffè sono l’unico modo di interpretare una bevanda tanto complessa?

Eppure, se sei un barista tu non cuoci pasta per vivere, tu prepari i caffè. É quello che ti dà da vivere. Forse per una stagione o forse, come per tanti di noi, tutta la vita.

Ed allora se davvero vogliamo compiere un primo passo, verso “un lavoro migliore” e se davvero vogliamo provare a diventare dei professionisti e ad avere passione per il nostro lavoro, iniziamo a porci delle domande.

Chiediamoci sempre se stiamo abboccando al Dottor Duncan Mc Dougall di turno, o se davvero stiamo indagando a fondo le informazioni che riceviamo.

Ora, se a questo punto ti stai chiedendo:

“Ma quindi sette grammi di caffè non vanno bene?”
