Parto così senza troppi convenevoli, per parlarvi di una problematica, le scuole di cucina e la moda che ne comporta, diciamo che tutto questo parlare di chef di stelle e di cucina è un arma a doppio taglio, ha portato un po di cultura del mangiare e della buona tavola ma ha anche portato tanta gente a pensare di saper fare un lavoro che non ha nemmeno idea di cosa comporta.

Turni di lavoro infiniti, lavorare quando gli altri festeggiano e vita privata complicata oltre che luoghi comuni, purtroppo, sono anche la verità di un lavoro che solo se ti appassiona riesce a colmare il vuoto che potrebbe lasciare. Certo perchè, anche questo è un luogo comune, il cuoco lo fai solo se hai passione e voglia di metterti alla prova tutti i giorni tutto il giorno, e purtroppo un corso di 3\4 mesi non forma uno chef.
Io dopo tutti questi anni non mi sento arrivato e affronto il lavoro con umiltà perche ogni giorno si imparano cose nuove, la cucina si evolve, si mettono in campo nuove tecnologie e nuove materie prime.



Per questo io consiglio a chiunque esca da un corso di cucina o da una scuola alberghiera, oltre che una buona dose di umiltà e testa bassa che non va confuso con servilismo, un’esperienza di lavoro a Londra.
Un anno nella capitale della Regina, sarebbe la cosa migliore che potreste regalarvi per il vostro futuro da chef.

Io personalmente ci sono stato quando avevo poco piu di venti anni. Dove si impara a lavorare in brigate grandi e articolate, dove il cliente giudica il tuo lavoro in maniera oculata decidendo , solo se è stato bene, di lasciare il “service charge” che sarebbe il pagamento del servizio, altrimenti un “complain” (lamentela del cliente) che farà saltare sui banchi lo chef, pronto a mettere in riga l’intera brigata.

Ripeto un’esperienza di lavoro a Londra è quello che piu vi formerà non tanto per le cose che cucinerete ma per il metodo di lavoro e le tecniche.
Questo naturalmente è la mia personale visione di questo variegato mondo che è la ristorazione.
Ultima cosa puntate in alto, sempre, ma ricordate che gli stellati sono pochi, e non tutti andrete a lavorare lì. Che lavoriate in un tre stelle o in una trattoria di paese, l’unica cosa che dovete sapere è che non c’è cosa più bella, di un cliente che esce appagato dopo aver mangiato ciò che avete cucinato.
