Guardare indietro alla mia carriera lavorativa sembra un viaggio nel tempo, sono nella ristorazione da sempre: padre installatore di cucine industriali, zio ristoratore ed un grande maestro per quanto concerne il vino.
Ricordo con nostalgia alcuni aspetti, meno altri, ma fin qui sembra tutto scontato, forse lo è ma la premessa era necessaria per arrivare al punto.

di qualche cuoco affermato.”

Tutti o quasi coloro che leggeranno questo post sono professionisti con un loro trascorso più o meno lungo legato all’età o al fatto di aver fatto la scelta di diventare camerieri tardi, ma quelli che come me hanno qualche anno in più ricorderanno che le cucine dei ristoranti non sono sempre state come le vediamo ora e che per definirsi cuoco non serviva aver seguito corsi o un iter scolastico, gli chef poi, fino a una trentina di anni fa non esistevano che in alcune realtà particolarmente blasonate, il loro come molti altri, era un lavoro che usciva dalla gavetta o dalla “bottega” di qualche cuoco affermato, ma in fondo la storia dei mestieri italiani si basa su questo concetto di artigianato trasmesso da una generazione all’ altra. Se oggi ci guardiamo intorno la situazione è del tutto cambiata, pochissimi sono i cuochi che non hanno seguito un iter di formazione scolastico ma questo secondo me in molti casi non è un vantaggio assoluto nei confronti di chi li ha preceduti.

Le scuole per il loro doversi confrontare simultaneamente con molti soggetti sono quasi costrette a darsi degli standard che non tengano conto dell’individualità e della storia del singolo, non possono tenere in considerazione il background culturale da cui ognuno di noi proviene, debbono attenersi a dei programmi generalisti e questo ha fatto si che almeno un paio di generazioni di cuochi siano state “superate” da chi uscendo da una scuola sentiva di avere dei vantaggi su chi proveniva da una bottega.

Ma è davvero così?
Diversamente per quanto riguarda la sala lo stacco non è stato così netto, esiste una larga fetta di camerieri formata sul campo e che deve la sua professionalità ad un collega anziano o ad un datore di lavoro che l’ha istruito con i limiti ed i pregi che ciò comporta.
Sarei molto felice di sapere cosa ne pensate ma, soprattutto, se credete che ci siano degli aspetti dell’ istruzione classica (quella di bottega) che vi abbiano aiutato nel vostro cammino e che abbiano formato il vostro carattere, il vostro mestiere e che reputiate giusto salvaguardare e viceversa se pensiate che ci sia qualcosa da rivedere nelle modalità accademiche d’insegnamento, non critiche becere ma punti di vista seri e costruttivi di professionisti.
